Thank you for putting all these voices together in one piece. With everyone rushing to go back “to normal” here in NYC and seemingly forgetting everything we learned in April, I was beginning to think I was crazy for thinking all these things. I’m glad to see I’m not alone.
This read reminds me of a conversation I had with a chef several years ago about the pressure by owners of having to act like celebrities. This chef had zero desires of being on social media or talking to the press, which is understandable. I believe many chefs are being put in a position of feeling they're not good enough if they're not on TV or get a feature in Bon Appetit. Sad because it takes away from the food.
