Happy to see you mention vegan baking and egg white substitutes. I use applesauce and other tricks to substitute eggs, including aquafaba and organic commercial egg replacers. Necessity is the mother of Invention. I do vegan baking for my vegan daughter, husband and twin 7 year old grandsons. Nothing vegan turns our as well as my other baking but I persist. They always enjoy it - even my epically messy, heavy Easter Bunny and Kitty Cat cakes.
