It really saddens me that Amanda is left out of the conversation. She pioneered innovative techniques with her vegetable dishes, and the stuff that's touted as vegan foie gras today is pretty much some version of the mushroom mousse/pate from her cookbook. I first heard about her on an episode of Radio Cherry Bombe years ago - and then went down a rabbit hole of reading everything about her, and I bought her cookbook (which is honestly the coolest one on my shelf, and what taught me to save broccoli stalks every time I cook). I think she paved the way for places like By Chloe and Slutty Vegan.

Thank you for your most recent essay. My eyes keep opening. Thank you for all the work you have done, are doing. It really really matters to me and it so intersects with everything else that is going on in my world. And I ordered some Easter eggs from the chocolate shop!

Went down a rabbit-hole following all the links provided in this week's essay and just ordered a copy of "The Sexual Politics of Meat." Forgive the pun, but there is so much food for thought in every newsletter.
