"Do you believe whiteness is a major force in defining global standards of desirability in food" — Yes yes yes! This is so good. This can be applied to so many things within our culture but I love that this question is being posed for your students. Also, the slow gentrification of foods that happens in the U.S., i.e. rebranding plantain chips, calling agua fresca "spa water" ...I mean the list goes on. Forever loving your approach to these topics and looking forward to next weeks!

I love the way you have organised the course - and using questions as pivot points is perfect, enables you to transition with the students now thinking at the start about a key issue - makes me wish I was back in the uni, in your course

This week’s essay asks good questions. It makes me think of the “Mad Men” episode when Betty presents a trip around the world themed dinner party. https://en.wikipedia.org/wiki/A_Night_to_Remember_(Mad_Men) I’m also reminded of watching a tremendous spatula full of butter hit the grill at Benihana.
